Beef & Rice Stuffed Bell Peppers

For those afternoons or evenings when you can’t think of what to do with an everyday staple, rice, here is a delicious and easy dish for stuffed bell peppers that you can prepare. Pepper1   Ingredients 6  medium bell peppers, tops removed and reserved, and seeds removed 1 tablespoon olive oil 2  yellow onion, diced 3 tomatoes, diced 1  stalk celery, diced 2  cloves garlic, minced 250 grams lean ground beef oregano salt pepper 1 cup cooked brown rice or basmati rice Gruyere, 100 grams or feta, 150 grams Preparation Prep: 25 Minutes Cook: 10 Minutes Preheat oven to 180°C. Warm olive oil in a large frying pan over medium-high heat. Add onion and cook, stirring occasionally, until translucent, about 4 minutes. Add celery and garlic and continue cooking until vegetables are just softened, 4 minutes longer. Add beef, oregano, salt and pepper and cook, breaking up large chunks, until meat is no longer pink, about 7 minutes. Add tomatoes and rice and cook 5 minutes longer. Fill peppers with meat and rice mixture, dividing evenly. If you’d like add some grated gruyere, feta or cheese of your choosing to the mix and/or sprinkle some on top before you put the peppers in the oven. Then cover the pepper with its lid.
